Grain Salads

All winter I dream about this time of year. And
this year it seems extra special. We have had what seemed like the longest and coldest spring ever. Oh yeah, and a pandemic. But at least we have the best summer produce to enjoy now as a reward.
I thought I would feature grain salads here. They are so quick, easy, and delicious. And one salad can last quite a few days. A few tips...choose whichever grain you have or are in the mood for. Also, experiment with di erent herbs and feel free to substitute other seasonal veggies and fruits that look good at the market.
